Porcetta-A Northern Italian Pig Roast
In early summer the fennel grows wild
and the pigs are small, and all across Northern Italy
every Tuscan village celebrates with a 'Porcetta'.
The preparations begin weeks in advance
and culminate with a “festa” in the town marketplace.
Traditionally, the pork is roasted, carved
and served with focaccia bread,
an assortment of sauces and grilled vegetables.
